The K-series knives are the most exceptional knives in the Robert Herder line up. The carbon blades contain at least 1% carbon allowing high levels of hardness 61.5 HRC allowing for a much sharper knife with long edge holding capabilities.
The K-series handles are hand carved in an oval, curved form that brings a well-structured balance to the knife. The seamless texture between the wood and the handle is truly the mark of an expert craftsman.
Carbon Blade and Plum Wood Handle with Brass Rivets
Carbon steel blades are harder, sharper, sharpen easily and retain a sharp edge longer than stainless steel blades. Carbon blades will gain a greyish patina after the first cut when oxidation occurs from contact with water, vegetables and fruit juices - this is normal and harmless. Wash knife between use with soapy water and dry immediately. Do not allow knife to sit in water as it will rust.
