There are hundreds of varieties of corn if not thousands. The heart and soul of Mexican cuisine is corn. Corn used to happen in the backyards of people’s houses, and it was not a monoculture, it was part of a farming system called milpa. Milpa was a pre-hispanic system that was developed to grow corn. There’s a system of plants that coexist and work together, where the corn will draw nitrogen from the soil and the beans will put it back. In this way, there is no waste and everything gets utilized. Milpa is a gift from the earth.

Casa Bosques Chocolate is a unique project emphasizing the exploration of chocolate's history, origins, and culture. Sourcing heirloom cacao beans from small ranches in Mexico and Latin America, particularly in Pichucalco, Chiapas, each bar begins with just two ingredients: heirloom cacao beans and organic cane sugar. During production, they incorporate additional natural ingredients while avoiding emulsifiers, artificial flavorings, or preservatives. Collaborating with artists for limited editions, Casa Bosques transforms chocolate into edible art, ensuring each bite is a journey of flavor and craftsmanship.
