The de Buyer MINERAL B Blini Pan is ideally sized for making blinis, pancakes and fried eggs. Made in France from heavy-duty carbon steel, its excellent heat conductivity encourages even browning and caramelization for food that is crisp on the outside and tender within.

Constructed from 99% iron, the pan is finished with a protective layer of organic beeswax that helps prevent oxidation and prepares the surface for seasoning. With continued use, the cooking surface develops a dark patina and becomes increasingly non-stick—without the use of synthetic coatings.

Before First Use

Wash the pan with very hot water, a small amount of mild dish soap and an abrasive sponge or copper scrubber to remove the protective beeswax residue. Dry immediately.

Add a thin layer of high-smoke-point cooking oil to the pan and spread it across the entire cooking surface. Heat the pan until the oil begins to smoke lightly, then remove it from the heat. Carefully discard the excess oil and wipe the pan clean with a paper towel. The cooking surface will continue to darken and improve with regular use.

Care Instructions

After cooking, deglaze the warm pan with a small amount of liquid, then rinse with warm water. Use an abrasive sponge to remove any remaining residue. Dry the pan immediately and apply a very light coat of cooking oil to protect it from rust.

Once seasoned, avoid dish soap and other detergents as they can strip the seasoning. Never place the pan in a dishwasher, leave it to soak or allow it to air-dry in the sink.
