Robert Herder 1922 Chef's Knife - Carbon

True to their original knife the 1922 series by Robert Herder is die forged with a small bolster in the dry fine grinding method and blue glazed by hand. The blade is made of high-grade non stainless carbon steel which has been hardened to 60 HRC. Carved from plum wood the smooth handle fits firmly in the hand.

The blades on the 1922 series are sharpened very thin therefore enabling the finest of cuts without resistance. A masterclass in performance.

Carbon steel blades are harder, sharper, sharpen easily and retain a sharp edge longer than stainless steel blades. Carbon blades will gain a greyish patina after the first cut when oxidation occurs from contact with water, vegetables and fruit juices - this is normal and harmless. Wash knife between use with soapy water and dry immediately. Do not allow knife to sit in water as it will rust.
