It's always nice to receive a thoughtful gift, but isn't it great to receive something homemade? Especially something delicious. This Caramel Popcorn Brittle is perfect for making some quick gifts that'll have recipients grinning from ear to ear while snacking their way through it. Roll a few batches up in kraft paper, twine and some small branches and berries for an extra memorable gift.
- Non-stick cooking spray
- 2 cups of white sugar
- 1 cup of water
- ½ cup light corn syrup
- ½ teaspoon of coarse salt
- 2 tablespoons of unsalted butter
- ½ teaspoon baking soda
- ½ teaspoon of cayenne pepper
- 3 cups of CC Made Classic Caramel Corn
Begin by lining a rimmed baking sheet with parchment paper and lightly coating it with cooking spray. In a medium sauce pan combine the sugar, salt, cayenne, corn syrup and water. Bring it to a rapid simmer on medium-high heat and cook until the mixture is a deep golden brown (approximately 20 minutes) do not take your eyes off of it. Remove the pan from the heat and stir in the butter, baking soda and caramel corn. The baking soda will cause a reaction and will start to foam up, continue stirring until the mixture is smooth (approximately 1 minute). Transfer the mixture to a sheet pan and with a lightly greased spatula spread it evenly. Place the pan in a dry area and let it cool until firm (approximately 15 minutes). Once cool go ahead and break the brittle into pieces.
