Good Things to Drink

It’s cocktails-on-the-patio season coming up - and we couldn’t be happier about that! While leafing through English bartender Ryan Chetiyawardan’s gorgeous book Good Things to Drink, we eyed a Pineapple Rum with Ginger Beer cocktail that’s the perfect way to say cheers to the summer ahead. Using golden rum, a perfectly ripe pineapple, some cane sugar & chopped ginger we mixed this drink on a beautiful day last week and it was a delicious success.

Le parfait Jar Pineapple Mix

For this recipe you'll need the following:

  • 1 Bottle Golden Rum (Bacardi 8, Plantation 5 & Havana Club are recommended)
  • 50g / 2oz Sugar
  • 1 Thumb sized piece of ginger
  • 1 Very ripe pineapple

To top it off:

  • Good quality ginger beer, chilled (We used Fentiman's)
  • Cubed ice
  • Lime, to garnish

The Recipe:

  • Mix the rum & sugar in a jar
  • Peel & chop the ginger & pineapple and add to the sweetened rum
  • Allow to infuse for a few hours (or up to a day if you're the patient sort)
  • Strain through a sieve and store in the fridge until needed

To serve:

  • Fill a highball (or in our case, we used the ’Simple Tumbler’ available in our shop) with cubed ice and add 2 shots (50ml/2oz) of the infusion
  • Top with chilled ginger beer, stir and add a couple of squeezed wedges of lime

Finished drink with Copper Straw

Sip this one back in a Simple Tumblerwith a Copper Straw.

The recipe for this drink wasn’t too difficult and the results were outstanding. Ryan ‘Lyan’ Chetiyawardan, an internationally recognized bartender residing in London, England, recently won the title of Best International Bartender of the Year at the Tales of the Cocktail’s Spirit Awards in New Orleans - high praise indeed. He owns two incredible bars in London: White Lyan and Dandelyan. We wish we were nearby so we could frequent his bars for a personal cocktail concoction from the man himself, but until then we’ll gladly slurp our way through his delectable recipes.
